Cane Liquid Sugar is a clear to slightly amber viscous syrup manufactured from refined sugarcane juice and potable water. Available in common commercial concentrations (e.g., 65°, 70°, 75° and 80° Brix), the syrup provides reliable density and sweetness for repeatable formulations. Typical physical characteristics include density approximately 1.33–1.40 g/mL at 20 °C (depending on Brix), pH 6.0–7.5 and sucrose representing the majority of soluble solids. Color is controlled by ICUMSA grading; lower ICUMSA values are available for applications requiring lighter appearance and flavor neutrality.
